Our Story

PERIQUE PEPPER SAUCE® began as a dream in a sugarcane field. The scene of the dream took place in Grand Point, LA, within the Parish of St. James—in the year 1999 while standing near an old withering cypress barn. Within minutes the idea was reduced to a single journal entry consisting of three words, along with a small, theoretical, mechanical diagram of a pepper press. This journal entry was soon shelved and largely forgotten for a decade.


A brief, but sincere, effort was made in 2009 to actualize this dream by an ephemeral company known as NICOPOLIS SPICE COMPANY. In the year 2016 the first sample bottles of PERIQUE PEPPER SAUCE® were made in a small New Orleans kitchen, and done so in great secrecy. The three words were rarely, if ever, uttered during the process. The secret of PERIQUE was never spoken aloud.


PERIQUE PEPPER SAUCE® was first commercially produced in the East of New Orleans in 2018. Three products were produced: Black Label, Red Label, and Green Label—PERIQUE PEPPER SAUCE®. The Company’s portfolio soon diversified into several brands, with a number of different products, which made us much more than just another “hot sauce company”.
